This is where the experience starts. Carefully selected meats are grilled to order over high heat, creating a lightly charred exterior that seals in the juices while bringing out deeper, slightly smoky flavors.
The Australian Black Angus Tomahawk, aged 270 days and available in 1.2kg or 1.4kg, is the centerpiece of the grill. Designed for sharing, it is handled with particular attention: each slice is cut against the grain to ensure a tender bite and a smooth texture in the mouth. The balance between fat and meat allows the flavors to develop fully, delivering a juicy, rich and satisfying experience from the first cut to the last.
The Black Angus tenderloin is a more refined option, known for its naturally low fat content and exceptional tenderness. It can be served with our Café de Paris sauce, a classic French preparation made from a warm butter-based emulsion infused with herbs and aromatic ingredients. We brought this sauce to Pattaya, in order to enhance the meat without masking it, adding depth while preserving the delicate texture of the cut.
The flank steak, Wagyu ribeye and lamb chops each deliver a very different experience on the plate, shaped by their level of marbling and fat. The flank steak is more direct and intense, with a pronounced beef flavor and a firmer bite that gives it real character. It’s the kind of cut that feels satisfying and full of depth with every chew. The Wagyu ribeye, on the other hand, is all about richness. As it cooks, the marbling melts into the meat, creating a buttery, juicy texture that almost dissolves in the mouth, leaving a long, savory finish.
Lamb chops add another dimension and a different kind of pleasure, with a slightly stronger, more distinctive taste that contrasts naturally with beef.
